Chicken Wraps!

 So these were variations of things  I saw on pinterest. They were ok, but I should really stick with actual recipes! so these are chicken tenderloin I pounded them out really flat and pretty thin (this is a fun task!) then the one on the left is filled with Basil Pesto, Parmesan and mozzarella cheese, and I think Spinach, I don't quite remember, the one below is filled with Ham slices and cheddar cheese (I wanted a Cordon Bleu type flavor), I wrapped them up dipped them in egg white, floured and breaded them with Italian bread crumbs and baked at something like 200 degrees F. until the chicken was cooked through and the breading was lightly browned...they were ok but they were way too floury! Also this would have been easier if I had toothpicks to hold them together once wrapped! um so good luck if you try this out!

Mug Cake Obsession

So this is a regular chocolate cake in a mug that doesn't have peanut butter in it! and it goes like this :) 4 TBS sugar, 4 TBS flour, 2 TBS cocoa, 1 egg, 3 TBS milk, 3 TBS oil, 3 TBS chocolate chips (optional). pop in the microwave for 3 minutes! Delicious :)



I also made a brownie for one in a mug and can't seem to find the picture but it's perfect when you are out of eggs! And it goes like this! 1/4 c. sugar, 1/4 c. flour, 2 TBS cocoa, a pinch of salt, 2 TBS olive oil, 3 TBS water. Put it in the microwave for 1 minute and 40 seconds and it tastes just like a homemade batch of brownies :) Enjoy!

Nope, nope never again!

I was so excited about this recipe for banana bread in a mug! It came from the same post as that delicious cookie and peanut butter chocolate cake! What could go wrong?! Everything apparently! This was very gross! I'm not even going to tell you what is in it because it tasted like egg and banana which is not a good mix! It also didn't even turn out remotely like bread, I will never feel the need to save bananas until they are very ripe, again. Unless I make banana muffins?...hmmm Anyway, not everything I make is delicious...apparently :/

Friend Approved!

I was so nervous to try this recipe but it turned out amazing! And my friends loved it too! We basically devoured it :) This everyone is Garlic Cheesy bread! And this is what to do: for the dough, put in a mixing bowl 1/2 cup warm water, 1 1/8 tsp yeast, and 1/2 tsp of sugar, let it sit for 5-10 minutes. Then add 1 tsp salt, 1 TBS oil, and slowly add in 1 1/2 cup of self raising flour. Knead well for six minutes! (May need to add a little more flour to get the right consistency, should not stick to hands). let it rise for an hour or two. for the topping, mix 2 TBS butter (melted) and garlic (I only had garlic salt so I just put it in until it looked and smelled like the right amount). spread the dough out onto parchment paper, spread the butter and garlic mixture and top with Mozzarella cheese (cover well!) and Parmesan cheese (enough to fill in any gaps and have a nice covering). Bake about ten minutes at 500 degrees, or in my case as high the oven will go. and then! mmmmm pretend you just ordered this from your favorite pizza place!

This is a peanut butter chocolate mug cake. It was completely delicious and satisfying! It filled me up, and now my whole apartment smells delicious! I am still without Vanilla so that is the only ingredient missing from the recipe but this is what to do. Melt 2 TBS of butter, add 2 TBS of peanut butter, 1 egg, 2 TBS of flour, 3 TBS of cocoa, 1/8 tsp of salt, 1/8 tsp baking powder mix well and add 3 TBS of chocolate chips. Then simply microwave 1-2 minutes. I did one minute, had a mug of goo so i put it in for another minute and it was VERY cake like :) possibly a bit over done. But delicious just the same!

Bread!

These turned out golden brown and fluffy all the way through! They were quite bland tasting but dipped in oil and salt (I have learned the Italian way) they make for a nice side to a meal. 2 1/4 TBS of yeast, 1/4 cup warm water, 1/2 cup warm milk, 1 TBS sugar. Let stand for five minutes. Then add 2 cups of flour (I used self raising, which I think the original called for), 1/2 tsp of salt. Mix Well and add 4 TBS butter. Knead well, cover and let rise for 45 minutes.  Put into whatever shape (these were supposed to resemble crescent rolls but got too fluffy!) then make at 400 degrees for 15-20 minutes. Then share with flatmates so that you're not tempted to eat all 9 of                                                                                     them :) Enjoy!

Cookie in a Cup!

This turned out to be a little tricky because my measuring cup disappeared! Anyway, this is a chocolate chip cookie for one, made in a mug! And this is how you do it :) melt 1 TBS of butter, add 1 TBS of Sugar, 1 TBS of brown sugar, 3 drops of vanilla extract (i don't have this so  I just didn't do it!) and a pinch of salt. stir. then add one egg yolk and stir. then add a little less than 1/4 cup of flour, then add two heaping TBSs of chocolate chips. Put in microwave for about 50 seconds. it's important to let it sit because it keeps cooking in the mug after you finish and it's really hot and tastes funny if you try to eat it right away (from experience!). BUT, after it sat and cooled a little it tasted much more like a cookie :) Njoi!

Snack/breakfast quesadilla!


Forgot to take a picture when it was pretty! I had already folded it and then unfolded it to show the inside. So this is the most genius midnight snack ever! A regular Tortilla spread with peanut butter, a sliced banana, a few sliced strawberries, and a few chocolate chips. I don't have a sandwich press or toaster oven so I put it in the oven at 350 degrees for about 10 minutes to let it get toasty and absolutely awesome! I had this with some hot chocolate and was in heaven!

Zucchini Fries: new obsession!

These were amazing! Baked Zucchini fries! I had them with chicken alfredo pene and it was perfect! to make simply cut a zucchini into "fry" shape, dip into an egg white, then into bread crumbs (mine were herb and garlic flavoured), then place on a greased baking sheet for 20 minutes at 425 degrees. I tried mine with marinara sauce but like them just plane better! These were so good!! I'm not kidding!

Alright, this one I have been dying to try forever! The problem being that they don't have cold dough in Australia, like Grands (what was called for) or Pillsbury, so I had to make my own dough! But I had to wait until the ingredients fit into my grocery list. So I made my own dough: 2 cups self rising flour, 1/2 tsp salt, 2 1/4 tsp yeast, 1/2 cup warm milk. 1/4 cup warm water, 1 TBS sugar, 4 TBS softened butter, let sit for 45 minutes. Put the dough into a muffin tin (kind of tricky) then the filling: can of Cream of Chicken Soup, pre-prepared chicken, and frozen mixed vegetables, (potatoes would have been good in it too but that was an after though so they didn't make into this batch). Bake at 400 degrees for about 20 minutes, or until the dough is golden brown. Its hard to make it "pie-like," mine turned out rather doughy so i'm sure there is a better way to put the filling actually into the dough, but it all falls apart anyway when you eat it right?! It was delicious and filling, it made nine pies, the dough to filling ratio was a bit off but that's alright. I have leftovers for lunches this week and to share with my flat mates! Enjoy!

Family Tradition :)

This is a meal fit for any special occasion at my house! And I had the ingredients to make it happen :) I cooked some potatoes in the microwave (a little water in a bowl, a colander on top) for 10 minutes...perfect! Mashed them up with some salt, pepper and butter. I made some chicken (we usually bake it, but I didn't feel like waiting!) I cooked it on the stove but doused in italian dressing! It was just like home! Then I added a pre-packaged family salad with italian dressing, and Vou-la! the perfect dinner. It only took about twenty minutes altogether :) . . . I think i'll have some ice cream for dessert!

A Quick Lunch

This is just a quickie but it was delicious and filling! I just prepared some pasta, chicken, and peas!
I mixed them all together with Pesto sauce (which I'm in love with!) I had some tea to drink with it, and it was a very satisfying lunch! This one actually kind of looks like the picture on Pinterest.com!

Late Night Snacking...mmmm

Late night snacking! 

(good use of my apples)


I've been wanting to try this one for a long time now and finally made time, and had the appetite for it! Just take an apple, slice it, core it, (I don't have a corer so I just cut the middles out) add peanut butter and chocolate chips! A fun and healthy snack or dessert :)

This one isn't from Pinterest.com but it was delicious, and is an old family tradition! I took an apple and cut it up into pieces, put it in a microwave safe bowl with a bit of water and some cinnamon sugar (usually I think we use regular cinnamon but cinnamon sugar seemed more practical when I went shopping). I microwaved the apple slices for 4 minutes, which was a little too long, they dried out some, but still tasted great! I took them out, added a little more cinnamon sugar, put them over a nice helping of vanilla ice cream and made some hot chocolate to savor the flavor. It tasted wonderful before turning in for the night.

Mmmm Dessert! So this looked much prettier on Pinterest! It's strawberries, I cut the tops off and the middle out (I ate the middles of course because I didn't want them to go to waste!) and then I filled the center with yogurt...you were supposed to use Greek Yogurt, I had regular yogurt but as you can see it was very runny, I topped each with a chocolate chip and put them in the freezer just for a little while as I ate my lunch. They tasted wonderful, although most of the yogurt ran out. And now I have to go get more strawberries!


Ok, so these are the first creations that I have concocted! 
(Keeping in mind I don't have measuring utensils, so I never know how much I'm going to end up with)


 This is my most recent one! Macaroni and Cheese with Spinach and a fruit salad! Yum! Ok, So I prepared some macaroni noodles, easy! I cooked some Spinach...sure ok! then I threw some cheddar cheese and egg and some milk in a sauce pan and made some sauce. I mixed it all together and put it in a greased muffin tin at 400 degrees for about 15 minutes. While it was baking I got some grapes, apples, and strawberries and called it a side :) The noodles were a little dry after but it tasted great! 
This one was pretty straight forward. I made some rice, some broccoli, and some beef. I put it all together and ate it. Making a single serving of Rice is hard but it was good to have some flavor and texture!
 This one was fun and my roommate enjoyed it too! I prepared some rice and chicken. I mixed it with broccoli, cheddar cheese, and and egg (a binding ingredient!). I put it in the oven at 350 degrees for about 25 minutes! It was good, although my rice was not soft enough, I was impatient. But they were good reheated also!
This was delicious! Zucchini Pizza! I cut the Zucchini into four pieces (my zucchini was much too thick! I'll know better next time) I put some oregano and salt on it (I have no pepper) and I baked them at 400 degrees for 15 minutes. I then took them out and added mozzarella cheese and pepperoni and pizza sauce of course. (not in that order) and baked it for about another 10 minutes. it tastes just like regular crusted pizza!




I also made some rice, meatballs, and broccoli and doused it in BBQ sauce. (I forgot to take a picture!) It was ok, but I think I had too much sauce and it was kind of overwhelming. Again, making a single serving a rice is kind of difficult! But, I ate it anyway. In the words of my mother "Waste not, want not!"
So, I'm living in a small apartment this semester as I study at The University of the Sunshine Coast. I don't have a lot of money for food because I want to be able to travel!! So, I look through the "Food and Drink" category on Pinterest.com If I see something I might like I right down the ingredients and I MIGHT buy them. If I have most of the stuff I need I just kind of make up my own recipes. So on this blog I will show you pictures of what I create and what I did to extensively simplify the recipes found online!
